Hasselback Potatoes

Ingredients

  • 10 medium baking potatoes
  • 5 tablespoons butter, melted
  • kosher salt
  • 1 tablespoon pepper
  • 10 bay leaves

Steps

    1. Preheat oven to 425°F.
    2. Cut slits into each potato, stopping just before cutting through so that the slices stay connected at the bottom of the potato. Space the slices ⅛-inch to ¼-inch apart.
    3. Arrange the potatoes in a 9x13-inch baking dish. Brush the potatoes all over with the butter, including the bottoms. Sprinkle the potatoes generously with salt and pepper. Place 1 bay leaf in a slit of each potato.
    4. Bake potatoes for 30 minutes. Brush the potatoes again with butter, making sure the butter gets into some of the slits.
    5. Bake 30-40 minutes more or until the potatoes are crispy on the edges and easily pierced with a knife.
    6. Remove bay leaves before eating.
