Ingredients
- ¾ cup water
- 3 (0.25 oz) packets unflavored gelatin
- Cooking spray
- 1 (13.66 oz) can coconut milk
- 2 (12 oz) cans evaporated milk
- ½ cup sweetened condensed milk
- ½ teaspoon vanilla extract
- ¼ cup dried mango slices (or apricots)
- ¼ cup diced dried pineapple
- ¼ cup raisins
- ¼ cup shredded coconut (optional)
- Plastic wrap
Steps
- Place water in medium bowl. Sprinkle gelatin evenly over water; let stand 10 minutes (do not stir). Coat tube pan (or gelatin mold) with spray.
- Combine all milks and vanilla in large saucepan on medium; whisk mixture until steaming (do not boil). Stir in bloomed gelatin until mixture is smooth.
- Pour into prepared pan; sprinkle evenly with dried fruit and coconut, if using. Cover with plastic wrap and chill overnight or until fully set. Invert onto serving plate. Serve.
