Haitian-Style Coconut Gelatin (Blancmange)

Ingredients

  • ¾ cup water
  • 3 (0.25 oz) packets unflavored gelatin
  • Cooking spray
  • 1 (13.66 oz) can coconut milk
  • 2 (12 oz) cans evaporated milk
  • ½ cup sweetened condensed milk
  • ½ teaspoon vanilla extract
  • ¼ cup dried mango slices (or apricots)
  • ¼ cup diced dried pineapple
  • ¼ cup raisins
  • ¼ cup shredded coconut (optional)
  • Plastic wrap

Steps

    1. Place water in medium bowl. Sprinkle gelatin evenly over water; let stand 10 minutes (do not stir). Coat tube pan (or gelatin mold) with spray.
    2. Combine all milks and vanilla in large saucepan on medium; whisk mixture until steaming (do not boil). Stir in bloomed gelatin until mixture is smooth.
    3. Pour into prepared pan; sprinkle evenly with dried fruit and coconut, if using. Cover with plastic wrap and chill overnight or until fully set. Invert onto serving plate. Serve.
