Ingredients
- 1 rack St. Louis–style ribs (2–3 lb)
- 2 tablespoons red wine vinegar
- 2 tablespoons sazón with coriander and annatto
- 2 tablespoons brown sugar
- Heavy-duty aluminum foil
- ½ cup barbecue sauce
- ½ cup taco sauce
- 2 tablespoons canola oil
Steps
- Pat ribs dry. Remove membranes from back of ribs. Rub both sides of ribs with vinegar, then rub in sazón and brown sugar (wash hands). Let stand 30 minutes at room temperature (or chill overnight) to marinate.
- Preheat oven to 275°F. Wrap ribs tightly in foil, place on baking sheet, and bake 2 hours or until ribs are 190°F. Unwrap ribs and let rest 20 minutes. Combine barbecue and taco sauces.
- Preheat grill on medium-high. Rub ribs with oil; grill 4–5 minutes on each side until grill-marked. Brush both sides of ribs with sauce mixture during last minute of cooking; serve with remaining sauce mixture.
Chef's Tip: Serve with pickles and potato salad.
