Ingredients
- 1 lb seedless watermelon chunks
- 1 tablespoon fresh mint
- 1 teaspoon garlic stir-in paste
- 2 tablespoons olive oil
- ½ teaspoon liquid smoke (or Worcestershire sauce)
- 6 (6-inch) wooden skewers
- 1 teaspoon steak seasoning
- ¼ cup crumbled feta cheese
- Balsamic glaze (optional)
Steps
- Place cooling rack on baking sheet. Pat watermelon dry with paper towels and arrange on cooling rack. Chill 1 hour.
- Preheat grill (or grill pan) on medium. Chop mint finely. Whisk garlic paste, oil, and liquid smoke until blended.
- Thread watermelon onto skewers; brush evenly with garlic mixture. Grill 5–6 minutes, turning occasionally, until warm and grill-marked. Top watermelon evenly with seasoning, cheese, mint, and glaze, if using; serve.
Other Preparation Methods
- Drink: Place 1 lb seedless watermelon chunks in blender and blend until smooth. Add 1 tablespoon lime juice, 1 cup whole milk plain Greek yogurt, 2 tablespoons agave nectar, and ¼ teaspoon kosher salt. Blend until smooth. Pour into ice-filled glasses.
- Ice: Arrange 1 lb seedless watermelon chunks on nonstick baking sheet. Freeze 1 hour or until solid.
