Grilled Watermelon Skewers

Ingredients

  • 1 lb seedless watermelon chunks
  • 1 tablespoon fresh mint
  • 1 teaspoon garlic stir-in paste
  • 2 tablespoons olive oil
  • ½ teaspoon liquid smoke (or Worcestershire sauce)
  • 6 (6-inch) wooden skewers
  • 1 teaspoon steak seasoning
  • ¼ cup crumbled feta cheese
  • Balsamic glaze (optional)

Steps

    1. Place cooling rack on baking sheet. Pat watermelon dry with paper towels and arrange on cooling rack. Chill 1 hour.
    2. Preheat grill (or grill pan) on medium. Chop mint finely. Whisk garlic paste, oil, and liquid smoke until blended.
    3. Thread watermelon onto skewers; brush evenly with garlic mixture. Grill 5–6 minutes, turning occasionally, until warm and grill-marked. Top watermelon evenly with seasoning, cheese, mint, and glaze, if using; serve.
Other Preparation Methods
    • Drink: Place 1 lb seedless watermelon chunks in blender and blend until smooth. Add 1 tablespoon lime juice, 1 cup whole milk plain Greek yogurt, 2 tablespoons agave nectar, and ¼ teaspoon kosher salt. Blend until smooth. Pour into ice-filled glasses.
    • Ice: Arrange 1 lb seedless watermelon chunks on nonstick baking sheet. Freeze 1 hour or until solid.
