Grilled Tuna and Farro-Kale Salad

½ cup farro (or barley)
1 ½ cups vegetable stock (or water)
2 (6-oz) fresh tuna fillets
Cooking spray
½ teaspoon Montreal seasoning
4 cups kale salad blend
¼ cup lemon vinaigrette
¼ cup shaved Parmesan cheese
Steps
Combine farro and stock in a medium sauce pot; bring to a simmer and cook 20–30 minutes or until tender. Drain.
Preheat grill. Coat tuna with cooking spray and Montreal seasoning; cook 3–4 minutes on each side or until 145°F. Cut into 1 inch cubes.
Combine salad greens, farro, tuna, and lemon vinaigrette; toss to coat. Top with cheese. Serve.
