Ingredients
- ½ cup farro (or barley)
- 1 ½ cups vegetable stock (or water)
- 2 (6-oz) fresh tuna fillets
- Cooking spray
- ½ teaspoon Montreal seasoning
- 4 cups kale salad blend
- ¼ cup lemon vinaigrette
- ¼ cup shaved Parmesan cheese
Steps
- Combine farro and stock in a medium sauce pot; bring to a simmer and cook 20–30 minutes or until tender. Drain.
- Preheat grill. Coat tuna with cooking spray and Montreal seasoning; cook 3–4 minutes on each side or until 145°F. Cut into 1 inch cubes.
- Combine salad greens, farro, tuna, and lemon vinaigrette; toss to coat. Top with cheese. Serve.
