Grilled Steaks with Roasted Garlic Oil

Ingredients

  • ½ cup peeled garlic cloves
  • ½ cup extra-virgin olive oil
  • 2 sprigs fresh rosemary
  • 2 (1-inch-thick) bone-in steaks (such as ribeye, porterhouse, or New York strip; about 2 lb total)
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly cracked black pepper

Steps

    1. Preheat oven to 350°F. Combine garlic, oil, and rosemary in small baking dish. Bake 30 minutes or until garlic is softened and lightly browned.
    2. Meanwhile, preheat grill (or grill pan) on medium-high. Season steaks with salt and pepper. Grill steaks 8–10 minutes, flipping occasionally, until 125°F (for medium rare; warm red center), 130°F (for medium; warm pink center), or up to 170°F (for well done). Remove steaks from grill and let stand 5–10 minutes before serving; temperature will rise 5–10°F during this time.
    3. Drizzle 2 teaspoons garlic oil over each steak and top with 4 cloves garlic. Serve with baked potatoes or rice.

    Chef's Tip: Refrigerate remaining oil and roasted garlic for another use.

The doneness temperatures for medium rare and medium stated above are traditional temperatures used for cooking steak, but are not recommended by the USDA. To maintain food safety, the USDA recommends an internal temperature of 145°F, as measured using a food thermometer, with a 3-minute rest time before carving.
