Grilled Steak Sandwich with Raspberry-Chipotle Sauce

Ingredients

  • ⅓ cup molasses
  • 1 tablespoon steak sauce
  • 1 teaspoon garlic salt
  • 1 teaspoon liquid smoke
  • Large zip-top bag
  • 2 lb beef flank steak
  • Aluminum foil
  • 1 medium red onion
  • 1 cup barbecue sauce
  • ¼ cup raspberry preserves
  • 3 tablespoons spicy brown mustard
  • 1 tablespoon chipotle hot pepper sauce
  • 6 hamburger buns

Steps

    1. Place molasses, steak sauce, garlic salt, and liquid smoke in bag; seal and shake to mix. Add steak (wash hands); seal bag and knead to coat steak, then let stand 30 minutes to marinate.
    2. Preheat grill (or grill pan) on medium. Place steak on grill (discard marinade); cook 10–12 minutes on each side, turning occasionally, until steak is 125°F (for medium rare; warm red center), 130°F (for medium; warm pink center), or up to 170°F (for well done). Transfer steak to cutting board, cover loosely with foil, and let stand 5 minutes.
    3. Slice onion thinly. Combine barbecue sauce, preserves, mustard, and pepper sauce; heat sauce, if desired. Slice meat thinly across the grain. Place meat on buns; top with sauce and onions. Serve.
    Note: The doneness temperatures for medium rare and medium stated above are traditional temperatures used for cooking steak, but are not recommended by the USDA. To maintain food safety, the USDA recommends an internal temperature of 145°F, as measured using a food thermometer, with a 3-minute rest time before carving.
