Grilled Salmon with Savannah-Style Red Rice

Ingredients

  • 1 teaspoon fresh thyme
  • 1 (7 oz) jar roasted piquillo (or red bell) peppers
  • 4 oz smoked sausage
  • 3 tablespoons unsalted butter
  • 1 (8 oz) package trinity mix (diced fresh onions, bell peppers, and celery)
  • 1 ½ teaspoons creole seasoning, divided
  • 1 cup basmati rice
  • 1 tablespoon chicken bouillon base
  • 1 cup tomato puree (passata)
  • 1 cup water
  • 4 (5.25 oz) salmon select cuts (about 21 oz)
  • 2 tablespoons extra-virgin olive oil
  • 2 lemons

Steps

    1. Preheat grill (or grill pan) on medium. Pick thyme leaves from stems. Drain roasted peppers; chop peppers and sausage finely.
    2. Preheat large saucepan on medium 2–3 minutes. Add butter and sausage; cook 3–4 minutes, stirring occasionally, until browned. Stir in trinity mix, thyme, and ½ teaspoon seasoning. Cook and stir 2–3 minutes until vegetables begin to soften.
    3. Stir in rice and bouillon paste. Cook 1–2 minutes, stirring continuously, until rice is well coated, then stir in tomatoes and water and bring to a boil. Cover, reduce heat to low, and cook 20 minutes until liquid has been absorbed and rice is tender. Remove from heat and let stand, covered, 10 minutes.
    4. Meanwhile, coat salmon with oil and remaining 1 teaspoon seasoning (wash hands). Halve lemons. Grill salmon 3–5 minutes on each side until centers of fillets flake easily and are 145°F. Grill lemons cut-side down 3–5 minutes until charred. Serve salmon over rice with charred lemons.
