Grilled Pork Chops with Charred Onion Mojo Sauce

Ingredients

  • 4 limes, for juice
  • 1 red grapefruit, for juice
  • 8 tablespoons extra-virgin olive oil, divided
  • 1 tablespoon + ¼ cup garlic stir-in paste, divided
  • 1 teaspoon ground cumin, divided
  • 1 teaspoon dried oregano, divided
  • 2 teaspoons adobo seasoning, divided
  • 2 thick-cut, bone-in pork chops (about 2 lb)
  • 1 large, fresh jalapeño pepper
  • 1 bunch green onions
  • ½ bunch fresh cilantro

Steps

    1. Juice limes (4 tablespoons) and grapefruit (½ cup). Whisk in shallow dish: 2 tablespoons lime juice, 2 tablespoons oil, 1 tablespoon garlic paste, ½ teaspoon cumin, ½ teaspoon oregano, and 1 teaspoon adobo until blended. Add pork chops to dish; flip and rub to coat with marinade (wash hands). Let stand 30 minutes (or chill overnight) to marinate.
    2. Preheat grill (or grill pan) on medium. Halve jalapeño; remove and discard seeds and membranes if desired. Coat jalapeño and green onions with 1 tablespoon oil. Place on grill and cook 2–3 minutes, flipping occasionally, until charred and crisp-tender. Remove from grill and chop coarsely.
    3. Place in blender (or food processor bowl): cilantro, grapefruit juice, green onions, jalapeños, and remaining 2 tablespoons lime juice, 5 tablespoons oil, ¼ cup garlic paste, ½ teaspoon cumin, ½ teaspoon oregano, and 1 teaspoon adobo. Blend 1 minute or until smooth.
    4. Place pork chops on grill. Grill 15–20 minutes, flipping occasionally, until grill-marked and 145°F. Remove from grill and let stand 10 minutes before slicing; temperature will rise 5–10°F during that time. Slice pork chops and serve with charred onion mojo sauce.
    Chef's Tip: Serve with your favorite sides such as black beans and rice, maduros, and garlic yucca.
