Grilled New York Strip with Blue Cheese Butter

Ingredients

  • ¼ cup unsalted butter
  • ¼ cup soy sauce
  • 1 tablespoon + 2 teaspoons garlic stir-in paste, divided
  • ¼ teaspoon pepper
  • ¾ teaspoon seasoned salt, divided
  • 2 (1-inch-thick) New York strip steaks (about 1 ¾ lb)
  • 2 oz crumbled blue cheese
  • ¼ teaspoon onion powder
  • Cooking spray

Steps

    1. Set butter out to soften. Combine in large dish: soy sauce, pepper, 1 tablespoon garlic paste, and ½ teaspoon seasoned salt. Place steaks in marinade, turning to coat all sides (wash hands); let stand 10 minutes to marinate.
    2. Combine in small bowl: blue cheese, butter, onion powder, and remaining 2 teaspoons garlic paste and ¼ teaspoon seasoned salt; mix until well blended.
    3. Preheat grill (or grill pan) on medium-high. Remove steaks from marinade (discard marinade) and coat with spray; grill 3–4 minutes on each side until steaks are 125°F (for medium rare; warm red center), 130°F (for medium; warm pink center), or up to 170°F (for well done). Transfer steaks to cutting board and let stand 5–10 minutes before slicing; temperature will rise 5–10°F during this time. Top with blue cheese butter and serve.
    Note: The doneness temperatures for medium rare and medium stated above are traditional temperatures used for cooking steak, but are not recommended by the USDA. To maintain food safety, the USDA recommends an internal temperature of 145°F, as measured using a food thermometer, with a 3-minute rest time before carving.

    • Reverse sear: Preheat oven to 275°F. Season 1 (2-inch-thick) New York strip steak with 1 teaspoon kosher salt and ½ teaspoon pepper. Place on flat roasting rack set on baking sheet (wash hands). Bake 40–45 minutes until steak is 120°F. Preheat medium sauté pan on medium-high 2–3 minutes; place 2 tablespoons oil in pan and add steak. Cook 2–3 minutes on each side until steak is at least 125°F (for medium rare). Remove steak from pan and let stand 5–10 minutes before slicing.
