Ingredients
- 1 lb fresh Brussels sprouts
- 1 large sweet onion
- 1 medium yellow (or green) bell pepper
- 24 oz baby red (or yellow) potatoes
- 4 tablespoons vegetable oil, divided
- 6 teaspoons Kentucky-Style Seasoning, divided
- 8 (12-inch) wooden skewers
- 1 lb pork tenderloin
- ⅓ cup Kentucky-Style Dark Barbecue Sauce
Steps
- Preheat grill (or grill pan) on medium. Trim and discard tough root ends from sprouts. Cut onion and bell pepper into 1-inch cubes.
- Place sprouts and potatoes in large, microwave-safe bowl. Cover and microwave on HIGH 4 minutes; drain well and let stand to cool 5 minutes.
- Coat sprouts, potatoes, onions, and peppers with 3 tablespoons oil and 4 teaspoons seasoning. Alternate vegetables evenly onto skewers. Coat pork with remaining 1 tablespoon oil and 2 teaspoons seasoning (wash hands).
- Grill vegetable skewers and pork 12–14 minutes, turning occasionally, until vegetables are tender and pork is 145°F. Let pork stand 5 minutes before slicing. Drizzle pork and vegetables with sauce; serve.
