Grilled Jerk-Style Shrimp Burgers

Ingredients

  • 1 medium red bell pepper
  • 1 large yellow onion
  • 1 habanero pepper
  • ½ cup white vinegar
  • ½ cup water
  • 1 tablespoon kosher salt
  • 1 tablespoon granulated sugar
  • 4 spicy baby dill pickles
  • 4 green onions
  • ¼ bunch fresh cilantro
  • 1 lb peeled/deveined large, tails removed
  • 2 tablespoons mild (or hot) jerk seasoning paste
  • 2 tablespoons Jamaican-style steak sauce
  • ¾ cup plain breadcrumbs
  • 1 large egg
  • Cooking spray
  • ½ cup mayonnaise
  • 4 sandwich potato rolls
  • 4 leaves green leaf lettuce

Steps

    1. Slice bell pepper, yellow onion, and habanero thinly; place in medium heatproof bowl. Combine vinegar, water, salt, and sugar in small saucepan; bring to a boil. Pour hot vinegar mixture over sliced vegetables; cover and chill 1 hour (or overnight).
    2. Cut dill pickles into thin, lengthwise slices. Chop green onions and cilantro coarsely. Combine in food processor: green onions, cilantro, shrimp, jerk paste, steak sauce, breadcrumbs, and egg (wash hands). Pulse 5–6 times until coarsely chopped and combined; chill 30 minutes.
    3. Preheat grill (or grill pan) on medium. Drain pickled peppers and onions mixture. Form chilled shrimp mixture into 4 (5 oz) patties (wash hands). Coat with spray and grill 4–6 minutes on each side until charred and 165°F.
    4. Spread mayonnaise evenly on insides of rolls. Arrange dill pickles on bottom halves; top with lettuce, pickled peppers and onions, and shrimp burgers. Complete with top halves of rolls; serve.
    Chef's Tip: Shrimp burgers are also great cooked in a hot cast-iron skillet with 2 tablespoons oil until browned and 165°F.
