Grilled Fruit and Vegetable Skewers

Ingredients

  • ½ peeled/cored pineapple (about 2 cups)
  • 1 medium red bell pepper
  • 1 small red onion
  • 8 (6-inch) wooden skewers
  • Cooking spray
  • 3 tablespoons brown sugar
  • 2 tablespoons reduced-sodium soy sauce

Steps

    1. Preheat grill (or grill pan) on medium. Cut pineapple, bell pepper, and onion into 1-inch chunks; alternate chunks on skewers and coat with spray. Combine sugar and soy sauce.
    2. Grill skewers 5–6 minutes, turning often, until grill-marked and tender; brush with sauce during last minute of grill time. Serve.
