Grilled Dry-Rub Barbecue Chicken

Ingredients

  • 1 ½ tablespoons smoked paprika
  • 1 tablespoon ground cumin
  • 2 teaspoons salt
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon garlic powder
  • 1 teaspoon pepper
  • ½ teaspoon cayenne pepper
  • 1 (8-piece) cut-up whole chicken
  • Large zip-top bag
  • ½ cup vegetable oil (optional)
  • 1 orange, for zest
  • 1 ½ cups BBQ sauce
  • 1 tablespoon apple cider vinegar

Steps

    1. Combine in small bowl: paprika, cumin, salt, thyme, garlic powder, pepper, and cayenne until blended. Sprinkle dry rub over chicken pieces and under chicken skin to season meat. Add chicken to zip-top bag (wash hands); seal bag and chill 1 hour (or overnight).
    2. Preheat grill on medium (make sure you leave part of grill for indirect heat). Moisten 1–2 paper towels with oil and wipe grill grates (if desired). Remove chicken from bag (discard bag) and arrange on grill (direct heat), skin side down. Grill chicken 10 minutes, until skin is golden brown and crisp; turn chicken over and continue grilling 10 more minutes.
    3. Zest orange (1 tablespoon); whisk zest with BBQ sauce and vinegar until blended. Reserve ½ cup BBQ sauce mixture.
    4. Move chicken to indirect heat section of grill and baste with remaining 1 cup BBQ sauce mixture. Close grill lid and continue cooking chicken 12–15 minutes, turning occasionally, until chicken is
    165°F (keep close eye on grill as flare-ups may occur). Serve chicken warm with reserved BBQ sauce mixture on the side.
