Grilled Chicken with Sweet Tea Glaze

Ingredients

  • 4 bone-in, skin-on chicken thighs (about 2 lb)
  • 1 teaspoon kosher salt
  • 1 teaspoon pepper
  • 1 teaspoon Cajun (or creole) seasoning
  • Cooking spray
  • 2 cups unsweetened prepared black tea
  • 12 bags black tea
  • ¼ cup hot (or regular) honey
  • ¼ cup orange marmalade

Steps

    1. Preheat grill (or grill pan) on medium. Season chicken with salt, pepper, and Cajun seasoning (wash hands), then coat with spray.
    2. Place chicken on grill. Grill 22–25 minutes, flipping occasionally, until chicken is grill-marked and 180°F.
    3. Meanwhile, heat prepared tea in medium saucepan on medium. Remove from heat and add tea bags. Let stand 5 minutes to steep, then squeeze tea bags for remaining liquid; discard teabags.
    4. Return saucepan to heat. Stir in honey and marmalade. Simmer 20–25 minutes until mixture has thickened and reduced to about ½ cup, then remove from heat. Brush chicken with glaze during last minute of cook time. Serve chicken with any leftover glaze.
    Chef's Tip: Serve with your favorite cookout sides, such as corn on the cob, potato salad, or coleslaw.
