Ingredients
- 4 bone-in, skin-on chicken thighs (about 2 lb)
- 1 teaspoon kosher salt
- 1 teaspoon pepper
- 1 teaspoon Cajun (or creole) seasoning
- Cooking spray
- 2 cups unsweetened prepared black tea
- 12 bags black tea
- ¼ cup hot (or regular) honey
- ¼ cup orange marmalade
Steps
- Preheat grill (or grill pan) on medium. Season chicken with salt, pepper, and Cajun seasoning (wash hands), then coat with spray.
- Place chicken on grill. Grill 22–25 minutes, flipping occasionally, until chicken is grill-marked and 180°F.
- Meanwhile, heat prepared tea in medium saucepan on medium. Remove from heat and add tea bags. Let stand 5 minutes to steep, then squeeze tea bags for remaining liquid; discard teabags.
- Return saucepan to heat. Stir in honey and marmalade. Simmer 20–25 minutes until mixture has thickened and reduced to about ½ cup, then remove from heat. Brush chicken with glaze during last minute of cook time. Serve chicken with any leftover glaze.
