Grilled Chicken with Honey-Ale Glaze

Ingredients

  • 4 chicken leg quarters (or bone-in thighs or drumsticks; about 4 ½ lb total)
  • 2 tablespoons vegetable oil
  • 1 teaspoon freshly cracked black pepper
  • 1 ½ teaspoons kosher salt, divided
  • ¼ cup honey
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons sriracha sauce
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ¾ cup + 2 tablespoons brown (or your favorite) ale, divided
  • 1 tablespoon cornstarch
  • 2 tablespoons fresh chives
  • Dill pickles (optional, for serving)

Steps

    1. Preheat grill on medium. Coat chicken with oil, then season with pepper and 1 teaspoon salt (wash hands).
    2. Combine in medium saucepan: honey, vinegar, sriracha sauce, paprika, garlic powder, onion powder, ¾ cup ale, and remaining ½ teaspoon salt. Bring to a simmer on medium; simmer 5 minutes.
    3. Combine cornstarch and remaining 2 tablespoon ale. Stir into pan and simmer 5 more minutes, stirring occasionally, until glaze has thickened. Remove one-half glaze and reserve. Reduce heat to low and keep remaining half glaze warm.
    4. Arrange chicken skin-side up on grill. Cover and grill 35–45 minutes, flipping occasionally, until chicken is grill-marked and 165°F. Brush chicken with one-half reserved glaze. Grill 5 more minutes before removing and brushing with remaining reserved glaze.
    5. Slice chives thinly; serve chicken sprinkled with sliced chives, with pickles and warm glaze on the side.

    Chef's Tip: You can also make this recipe with chicken wings and cut cook time by about half.
