Grilled Chicken and Bacon Sandwiches

Ingredients

  • 8 slices bacon
  • ¼ cup olive oil
  • 1 tablespoon buttery steakhouse seasoning
  • 1 small red onion
  • 2 boneless, skinless chicken breasts (about 1 ½ lb total)
  • 4 slices provolone cheese
  • 4 seeded hamburger buns
  • 8 tablespoons honey mustard
  • 8 leaves romaine (or iceberg) lettuce

Steps

    1. Preheat grill (or grill-pan) on medium-high. Cook bacon until crisp following package instructions.
    2. Whisk oil and seasoning until blended. Cut onion into ½-inch-thick rings and brush with one-half oil mixture, leaving onions intact.
    3. Place each chicken breast on work surface and slice in half horizontally, creating 2 equal pieces. Coat chicken with remaining half oil mixture (wash hands).
    4. Place onions on grill; cook 3–4 minutes on each side until grill-marked and crisp-tender. Place chicken on grill; cook 4–6 minutes on each side until grill-marked and 165°F. Place cheese on chicken during last minute of cook time to melt.
    5. Toast buns if desired, then spread honey mustard evenly on cut sides. Place bottom halves of buns on work surface; top with lettuce, chicken, bacon, onions, and top halves of buns. Serve.
