Ingredients
- 4 limes, for juice
- 1-inch piece fresh ginger
- 8 oz celery
- 1 small yellow onion
- 1 green bell pepper
- 10 cloves garlic
- 4 tablespoons white vinegar, divided
- 1 bunch green onions
- 1 bunch fresh cilantro
- 1 tablespoon fresh thyme leaves
- ¼ cup fresh oregano leaves
- 1 habanero pepper
- 2 teaspoons kosher salt
Steps
- Juice limes (¼ cup); peel ginger. Chop celery, yellow onion, bell pepper, garlic, and ginger roughly; place in blender. Add lime juice and 2 tablespoons vinegar; blend until smooth.
- Add green onions, cilantro, thyme, oregano, habanero, and salt; blend until smooth, adding remaining 2 tablespoons vinegar as needed to loosen sauce.
- Use 2 tablespoons Green Seasoning to make Pelau. Place remainder in airtight container and refrigerate for use as a condiment or marinade for meat or seafood.
