Ingredients
- 1 (32-oz) container grape tomato and squash spirals
- ½ cup cilantro, chopped
- 1 tablespoon fresh oregano, chopped
- ½ jalapeño pepper, diced (optional)
- 1 shallot, shaved
- 1 clove garlic, minced
- 2 limes, for juice
- 1 tablespoon tomato paste
- ¼ cup seasoned rice vinegar
- ½ teaspoon kosher salt
- ¼ teaspoon pepper
Steps
- Slice tomatoes in half lengthwise. Chop cilantro and oregano; dice jalapeño (if desired). Shave shallot and mince garlic, then squeeze lime for juice (¼ cup).
- Combine in small bowl: tomato paste, vinegar, and lime juice until blended.
- Combine in large bowl: tomato, squash spirals, cilantro, oregano, jalapeño, shallots, and garlic until blended. Add lime juice mixture to large bowl; toss to coat.
- Season with salt, and pepper and let sit at room temperature for 2 hours, stirring occasionally. Serve.
