Grape Tomato and Squash Spirals Slaw

Ingredients

  • 1 (32-oz) container grape tomato and squash spirals
  • ½ cup cilantro, chopped
  • 1 tablespoon fresh oregano, chopped
  • ½ jalapeño pepper, diced (optional)
  • 1 shallot, shaved
  • 1 clove garlic, minced
  • 2 limes, for juice
  • 1 tablespoon tomato paste
  • ¼ cup seasoned rice vinegar
  • ½ teaspoon kosher salt
  • ¼ teaspoon pepper

Steps

    1. Slice tomatoes in half lengthwise. Chop cilantro and oregano; dice jalapeño (if desired). Shave shallot and mince garlic, then squeeze lime for juice (¼ cup).
    2. Combine in small bowl: tomato paste, vinegar, and lime juice until blended.
    3. Combine in large bowl: tomato, squash spirals, cilantro, oregano, jalapeño, shallots, and garlic until blended. Add lime juice mixture to large bowl; toss to coat.
    4. Season with salt, and pepper and let sit at room temperature for 2 hours, stirring occasionally. Serve.
