Ingredients

  • ¾ cup crumbled Gorgonzola cheese
  • 1 cup half-and-half
  • 2 tablespoons all-purpose flour
  • 2 tablespoons garlic-herb butter
  • ½ teaspoon kosher salt
  • 1 (20 oz) package refrigerated homestyle diced potatoes
  • ¼ cup crispy fried onions
  • ⅛ teaspoon pepper

Steps

    1. Combine in microwave-safe bowl: cheese, half-and-half, flour, butter, and salt. Microwave on HIGH 2 minutes or until hot.
    2. Stir in potatoes, onions, and pepper. Cover and microwave on HIGH 10 minutes, stirring halfway through cook time, or until potatoes are tender and 165°F. Serve.

    Chef's Tip: For an elegant finish, place in oven-proof serving dish, top with more crispy onions, and broil 3–5 minutes until golden.
