Ingredients
- 8 oz fresh ginger root
- 1 cup water
- ½ cup sugar
- Ice
- 4 (12 oz) cans lime (or citrus) sparkling water, chilled
- 1 lime (optional for garnish)
Steps
- Peel ginger and slice thinly (about 2 cups). Place water and sugar in medium saucepan and bring to a boil on medium. Stir in ginger, cover, and reduce heat to medium-low; simmer 30 minutes. Strain, discard solids, and chill ginger syrup 30 minutes.
- Fill 4 tall serving glasses with ice, add 2 tablespoons ginger syrup, and top with sparkling water. Slice lime into wheels to garnish drinks, if using.
Other Preparation Methods
- Candy: Coat cooling rack with cooking spray. Place about 2 cups peeled, thinly sliced ginger and 4 cups water in large saucepan. Bring to a boil, cover, and reduce heat to medium. Cook 35–40 minutes until ginger is tender. Drain (reserving 2 tablespoons liquid). Return ginger to pan with 1 cup sugar and reserved liquid. Cook 15–20 minutes, stirring occasionally, until two-thirds of liquid has evaporated. Spread ginger on rack and cool completely.
- Dip: Combine 2 teaspoons peeled and grated ginger with 2 tablespoons each soy sauce and sweet chili sauce. Serve with vegetables or spring rolls for dipping.
