Gelatin-Lemon Bites

Ingredients

  • 1 ¼ cup water, divided
  • 1 (3 oz) package cherry (or cranberry) gelatin
  • 4 oz lemon-lime soda (or vodka)
  • 12 lemons

Steps

    1. Bring 1 cup water to a boil in small saucepan. Add gelatin to boiling water; remove from heat and whisk until dissolved. Add soda and remaining ¼ cup water to gelatin; stir. to combine
    2. Halve lemons lengthwise; scoop out lemon flesh and reserve empty hulls. Squeeze lemon flesh for juice (about 2 tablespoons); stir juice into gelatin mixture (discard remaining fruit).
    3. Arrange lemon hulls in muffin pan (or 13- x 9-inch baking dish). Fill each with equal amounts gelatin mixture, then chill 2–4 hours until set and firm. Cut into wedges. Serve.
