Garlic and Herb Langostinos over Pasta

Ingredients

  • 8 oz angel hair pasta
  • 3 slices bacon, chopped
  • 16 oz cooked/peeled langostinos, thawed
  • ⅓ cup white wine (or chicken broth)
  • 1 lemon, for zest/juice
  • 3 tablespoons herb garlic butter

Steps

    1. Cook and drain pasta following package instructions. Preheat large sauté pan on medium 2–3 minutes. Place bacon in pan; cook 3–4 minutes or until lightly crisp. Add langostinos to bacon; cook 3–4 minutes or until hot.
    2. Reduce heat to medium; add wine, 2 tablespoons lemon juice, and 1 teaspoon lemon zest. Cook until liquid is reduced by about one-half. Remove pan from heat; stir in butter and toss with pasta.
Other Preparation Methods
    • Salad: Combine 2 cups chopped, cooked/peeled langostinos with 1 cup sliced red onions, ½ cup chopped fresh cilantro, ¼ cup chopped olives, ½ teaspoon chopped jalapeño. Whisk ¼ cup each lime juice and olive oil; toss with langostino mixture. Season with salt and pepper.
    • Bake: Preheat oven to 400°F. Combine 1 cup chopped, cooked/peeled langostinos, ½ cup shredded mozzarella cheese, ⅓ cup sun-dried tomatoes, and 2 tablespoons softened butter. Spread over crusty bread slices; bake 8–10 minutes or until hot.
