Garlic-Onion Yuca

Ingredients

  • 1 lb frozen yuca
  • 4 cloves garlic
  • ½ bunch fresh cilantro
  • 1 medium red onion
  • ¼ cup extra-virgin olive oil
  • 3 tablespoons red wine vinegar
  • ½ teaspoon adobo seasoning

Steps

    1. Boil yuca following package instructions. Chop garlic and cilantro; slice onion thinly.
    2. Combine garlic, onions, and olive oil in large sauté pan on medium. Cook 8–10 minutes, stirring occasionally, until onions are softened.
    3. Drain yuca and remove inner fibrous core with paring knife. Toss yucca with onion mixture, cilantro, vinegar, and seasoning; serve.
