Ingredients
- 1 lb frozen yuca
- 4 cloves garlic
- ½ bunch fresh cilantro
- 1 medium red onion
- ¼ cup extra-virgin olive oil
- 3 tablespoons red wine vinegar
- ½ teaspoon adobo seasoning
Steps
- Boil yuca following package instructions. Chop garlic and cilantro; slice onion thinly.
- Combine garlic, onions, and olive oil in large sauté pan on medium. Cook 8–10 minutes, stirring occasionally, until onions are softened.
- Drain yuca and remove inner fibrous core with paring knife. Toss yucca with onion mixture, cilantro, vinegar, and seasoning; serve.
