Fruit and Nut Muesli over Yogurt with Blueberries

Ingredients

  • Nonstick aluminum foil
  • 1 cup old-fashioned oats
  • ½ cup wheat nugget cereal
  • ½ cup sliced almonds
  • ¼ cup unsweetened shredded coconut
  • 2 tablespoons flax seeds
  • 1 tablespoon canola oil
  • 2 tablespoons honey
  • 2 teaspoons vanilla extract
  • 1 cup dried apple chips
  • 6 cups non-fat plain Greek yogurt
  • 1 ½ cups fresh blueberries

Steps

    1. Preheat oven to 400°F. Line baking sheet with foil. Combine oats, cereal, almonds, coconut, and flax seeds. Combine oil, vanilla, and honey until blended; pour over oat mixture and stir to coat evenly.
    2. Spread mixture in single layer on baking sheet. Bake 10–12 minutes, stirring once halfway through cook time, until toasted and golden. Stir in apple chips; let stand 20 minutes to cool.
    3. Place 1 cup yogurt in each serving bowl. Top with ½ cup + 2 tablespoons muesli and ¼ cup blueberries. Serve. Store any leftover muesli in airtight container.

    Chef's Tip: You can easily double the recipe for the muesli and store in an airtight container. Enjoy by itself as a snack, serve over sliced fresh peaches or pears, or stir into applesauce.
