Ingredients
- Nonstick aluminum foil
- 1 cup old-fashioned oats
- ½ cup wheat nugget cereal
- ½ cup sliced almonds
- ¼ cup unsweetened shredded coconut
- 2 tablespoons flax seeds
- 1 tablespoon canola oil
- 2 tablespoons honey
- 2 teaspoons vanilla extract
- 1 cup dried apple chips
- 6 cups non-fat plain Greek yogurt
- 1 ½ cups fresh blueberries
Steps
- Preheat oven to 400°F. Line baking sheet with foil. Combine oats, cereal, almonds, coconut, and flax seeds. Combine oil, vanilla, and honey until blended; pour over oat mixture and stir to coat evenly.
- Spread mixture in single layer on baking sheet. Bake 10–12 minutes, stirring once halfway through cook time, until toasted and golden. Stir in apple chips; let stand 20 minutes to cool.
- Place 1 cup yogurt in each serving bowl. Top with ½ cup + 2 tablespoons muesli and ¼ cup blueberries. Serve. Store any leftover muesli in airtight container.
Chef's Tip: You can easily double the recipe for the muesli and store in an airtight container. Enjoy by itself as a snack, serve over sliced fresh peaches or pears, or stir into applesauce.
