Frosted Chocolate Malt Cookies

Ingredients

  • 1 (9 oz) box chocolate wafers, divided
  • ¾ cup dark brown sugar, packed
  • ½ cup unsweetened cocoa powder
  • 2 tablespoons malted milk powder
  • 1 tablespoon baking powder
  • 2 teaspoons kosher salt, divided
  • 2 cups flour (+more as needed)
  • ¾ cup chilled unsalted butter, cut into pieces (1 ½ sticks)
  • 1 teaspoon vanilla extract
  • ⅔ cup + ½ cup heavy cream
  • Plastic wrap
  • Parchment paper
  • 1 tablespoon light corn syrup

Steps

    1. Add 6 oz (⅔ box) chocolate wafers to bowl of food processor. Pulse until finely chopped; transfer to a large bowl.
    2. Add to same bowl of food processor: sugar, cocoa powder, malted milk, baking powder, 1 ½ teaspoons salt, and 2 cups flour. Pulse until combined then add butter; pulse until pieces are crumbly and no larger than pea-size. Transfer to bowl with cookie crumbs and mix until blended.
    3. Combine vanilla, and ⅔ cup cream in small mixing bowl. Drizzle over chocolate cookie crumb mixture; knead dough until it comes together, then transfer to a large piece of plastic wrap and wrap tightly. Chill dough 1 hour, until firm.
    4. Preheat oven to 400°F. Roll out dough between 2 sheets of floured parchment paper to ¾-inch-thick; punch out rounds with cookie cutter. Gather, knead, and reroll dough scraps. Transfer cookies to parchment-lined baking sheet and chill 10 minutes.
    5. Bake cookies 7–9 minutes, then rotate baking sheet and continue baking 7–9 more minutes. Remove from oven and cool on baking sheet.
    6. Meanwhile, bring small saucepot water to a simmer, and add to medium heatproof bowl: corn syrup, remaining 3 oz chocolate wafers, and remaining ½ cup heavy cream. Arrange bowl over simmering water and stir continuously until chocolate wafers are melted and mixture is smooth.
    7. Transfer bowl to large bowl of ice water and stir continuously until thickened but still pourable and shiny. Frost each cookie and sprinkle with remaining 1 teaspoon salt.
