Ingredients
- 4 ears fresh corn
- 3 medium tomatoes
- 1 tablespoon fresh cilantro
- ⅓ cup tri-pepper mix (diced fresh green, red, and yellow bell peppers)
- 1 tablespoon lemon juice
- ¼ cup Italian salad dressing
- 1 tablespoon green pepper sauce
Steps
- Remove corn husks and silks; slice kernels off cobs into medium bowl (2–3 cups). Scrape cobs with back of knife to collect remaining juices.
- Dice tomatoes and chop cilantro; add to corn. Stir in remaining ingredients. Let stand 5 minutes for flavors to blend. Serve.
