Feta-Stuffed Lamb Sliders

Ingredients

  • 2 oz chunk feta cheese
  • 1 lb ground lamb
  • 2 teaspoons dried oregano
  • 2 teaspoons garlic powder
  • 1 tablespoon extra-virgin olive oil
  • ½ seedless cucumber
  • ½ cup cucumber-yogurt dip
  • 24 mini pitas
  • ½ cup baby arugula
  • 12 (4-inch) wooden skewers (optional)

Steps

    1. Preheat grill (or grill pan) on medium. Cut cheese into 12 (½-inch) cubes. Combine lamb, oregano, and garlic until blended; shape into 12 meatballs.
    2. Stuff 1 cheese cube in center of each lamb slider, rolling lamb mixture completely around cheese; coat sliders with oil (wash hands). Grill 10–12 minutes, turning occasionally, until grill-marked and 160°F.
    3. Meanwhile, cut cucumber into 12 slices and spread even amount dip on 1 side of each pita. Place 1 cucumber slice, 1 slider, and even amount arugula on 12 pitas; top with remaining 12 pitas. Hold sliders together with skewers, if using. Serve.
    Note: Sliders can be baked in a preheated 425°F oven 18–20 minutes until 160°F.
