Eggplant Pizzettes

Ingredients

  • Aluminum foil
  • 1 large eggplant
  • ½ cup pizza sauce
  • ½ cup fresh prediced onions
  • ½ cup fresh prediced bell peppers
  • ¾ cup shredded mozzarella cheese

Prep

    • Place oven rack 6 inches from broiler, then preheat on broil.
    • Cut eggplant into 8 (¾-inch-thick) slices.

Steps

    1. Line baking sheet with foil. Arrange eggplant in single layer; broil 6–7 minutes or until lightly browned. Flip slices, then broil 4–5 more minutes or until second side is browned.
    2. Spread pizza sauce over slices, then top with onions, peppers, and cheese; broil 1–2 more minutes or until cheese melts. Serve warm.
