Easy Slow Cooker Red Beans and Rice

Ingredients

  • 1 (12 oz) package andouille sausage
  • 1 medium red bell pepper
  • 1 medium white onion
  • 2 ribs celery
  • 4 cloves garlic
  • 3 cans red beans (15–16 oz each)
  • 1 teaspoon dried thyme
  • 2 teaspoons creole seasoning
  • 2 teaspoons hot sauce (optional)
  • 2 cups white rice

Steps

    1. Slice sausages. Chop pepper, onion, celery, and garlic coarsely.
    2. Place all ingredients (except rice) in slow cooker (do not drain beans); stir to combine. Cook on HIGH 2–3 hours (or LOW 4–5 hours) until sausages are 165°F.
    3. Prepare rice following package instructions during last 30 minutes of cook time. Serve beans mixture over rice.
    Note: For a spicier dish, add more hot sauce.
