Ingredients
- 1 (12 oz) package andouille sausage
- 1 medium red bell pepper
- 1 medium white onion
- 2 ribs celery
- 4 cloves garlic
- 3 cans red beans (15–16 oz each)
- 1 teaspoon dried thyme
- 2 teaspoons creole seasoning
- 2 teaspoons hot sauce (optional)
- 2 cups white rice
Steps
- Slice sausages. Chop pepper, onion, celery, and garlic coarsely.
- Place all ingredients (except rice) in slow cooker (do not drain beans); stir to combine. Cook on HIGH 2–3 hours (or LOW 4–5 hours) until sausages are 165°F.
- Prepare rice following package instructions during last 30 minutes of cook time. Serve beans mixture over rice.
