Easy Muesli with Yogurt and Berries

Ingredients

  • Nonstick aluminum foil
  • 1 cup old-fashioned (rolled) oats
  • 1 cup honey nut toasted oats cereal
  • ¼ cup unsweetened shredded coconut
  • 2 tablespoons flax seeds
  • 1 tablespoon canola oil
  • 2 tablespoons honey
  • 2 teaspoons pure vanilla extract
  • 1 cup dried apple chips
  • 3 cups honey (or vanilla) yogurt
  • 1 ½ cups fresh blueberries

Steps

    1. Preheat oven to 400°F. Line baking sheet with foil. Combine oats, cereal, coconut, and flax seeds. Whisk together oil, honey, and vanilla; pour over oat mixture and toss to coat evenly.
    2. Spread mixture in single layer on baking sheet. Bake 10–12 minutes, stirring once halfway through, or until toasted and golden. Stir in apple chips; let stand 20 minutes to cool. (If making ahead of time, place muesli in airtight container until ready to serve.)
    3. Assemble by placing ½ cup yogurt in each bowl; top with ½ cup muesli and ¼ cup blueberries. Serve.
    TIP: You can easily double the recipe for the muesli. The muesli can be enjoyed by itself as a snack, served over peaches or pears for a little crunch, or stirred into applesauce.
