Easy Beef Stir-Fry and Rice

Ingredients

  • 1 cup jasmine (or white) rice
  • 1 (8 oz) can sliced water chestnuts
  • 1 ½ lb top sirloin steak
  • 4 tablespoons sesame (or vegetable) oil, divided
  • 1 (12 oz) bag fresh stir-fry vegetable mix (broccoli, snow peas, carrots, and cabbage)
  • ½ cup teriyaki sauce
  • ½ cup sliced fresh green onions

Steps

    1. Cook rice following package instructions. Drain water chestnuts. Slice steak thinly across the grain into bite-size pieces (wash hands).
    2. Preheat large, nonstick sauté pan on medium-high 2–3 minutes. Place 2 tablespoons oil in pan; add stir-fry vegetables. Cook and stir 4 minutes or until slightly charred, then remove from pan.
    3. Add remaining 2 tablespoons oil to same pan. Add beef in even layer, in batches if needed; cook and stir 2 minutes until browned. Remove from pan; repeat with remaining beef.
    4. Return vegetables and beef to pan; add water chestnuts, sauce, and green onions. Cook and stir 2 minutes or until vegetables are crisp-tender and beef is 145°F. Serve over rice.

    Chef's Tip: You can save time by using pouches of cooked rice.

Microwaves vary; adjust time as needed.
