Easy Beef Cottage Pie

Ingredients

  • 2 tablespoons fresh chives
  • 6 cloves garlic
  • 8 oz sliced fresh baby portabella mushrooms
  • 4 oz white cheddar cheese
  • 2 tablespoons canola oil
  • 1 cup diced fresh yellow onions
  • 1 lb lean ground beef
  • 1 teaspoon kosher salt
  • 2 cups unsalted beef stock (or broth)
  • 2 tablespoons cornstarch
  • 2 cups frozen peas & carrots
  • 24 oz refrigerated mashed potatoes

Steps

    1. Preheat oven to 400°F. Chop chives and garlic finely. Chop mushrooms coarsely. Shred cheese (1 cup).
    2. Preheat large sauté pan on medium-high 2–3 minutes. Place oil in pan, then add garlic and onions; cook and stir 4–5 minutes until lightly browned. Add mushrooms; cook and stir 3–4 minutes until browned.
    3. Add beef and salt to pan (wash hands); brown 4–5 minutes, stirring to crumble meat, until no pink remains. Combine stock and cornstarch in small bowl until blended, then stir into pan. Bring to a boil, then stir in peas and carrots; transfer mixture to 2-quart baking dish.
    4. Place mashed potatoes in medium bowl and stir until smooth. Stir in cheese and chives, then spread potato mixture over beef mixture; bake 8–10 minutes until top is lightly browned and filling is bubbly and 160°F. Serve.
