Ingredients

For crust
  • 1 ½ cups shortening
  • ½ cold water (+ more as needed)
  • 4 cups all-purpose flour (+ more for dusting)
  • 1 ½ teaspoons kosher salt
For filling
  • 8 medium Golden Delicious (or Granny Smith) apples (about 2 ½ lb)
  • 2 tablespoons unsalted butter
  • ¾ cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon kosher salt

Steps

    1. Prepare crust. Preheat oven to 400°F. Place shortening, water, flour, and salt in food processor bowl. Process just until dough clumps together, about 5 seconds, adding 1–2 tablespoons water if needed to form dough. Divide dough in half and shape each half into 6-inch-wide disc.
    2. Flour work surface lightly; roll out 1 dough half to ¼-inch thickness. Roll crust onto rolling pin, then unroll carefully in deep 9-inch pie pan. Trim edges ½ inch beyond rim.
    3. Prepare filling. Peel, core, and slice apples. Cube butter. Combine sugar, flour, cinnamon, and salt in large mixing bowl. Add apples and toss to coat. Spread filling into bottom crust and arrange butter cubes over filling.
    4. Roll out remaining half dough to ¼-inch thickness. Cut into 10 (½- to ¾-inch-wide) strips, then arrange crust strips in lattice design over filling. Press edges of top and bottom crusts together to seal; crimp decoratively if desired.
    5. Bake 40–45 minutes until crust is golden and apples are tender. Remove from oven and cool on wire rack 1 hour; chill 2 hours (or overnight). Serve.
    Note: If crust is browning too quickly, cover edges with foil during last 10–15 minutes of baking.
