Curried Buttermilk Dressing

Ingredients

  • 1 lime
  • 2 green onions
  • 4–6 stems fresh chives
  • 2 sprigs fresh mint
  • ¼ bunch fresh cilantro
  • 1 ½ cups buttermilk
  • ¾ cup plain whole milk Greek yogurt
  • 1 tablespoon ginger paste
  • 2 teaspoons curry powder
  • 1 teaspoon kosher salt
  • 2 teaspoons honey

Steps

    1. Zest lime (1 teaspoon), then juice (2 tablespoons). Thinly slice green onions and chives (2 tablespoons). Remove mint and cilantro leaves from stems; coarsely chop leaves.
    2. Combine all ingredients until well blended. Chill until ready to use. (Makes 2 ½ cups.)
