Ingredients

  • 1 lemon, for juice
  • 12 oz fresh strawberries
  • 4 (4-inch) drink stirrers (or skewers)
  • 2 tablespoons granulated sugar
  • 2 cups raspberry sherbet (or sorbet)
  • 2 (12 oz) cans chilled lemon (or lime) sparkling water
  • 2 teaspoons edible heart sprinkles (optional)
  • 4 straws

Steps

    1. Juice lemon (2 tablespoons). Hull and halve strawberries. Thread 3 strawberry halves lengthwise onto each skewer.
    2. Combine lemon juice, sugar, and remaining strawberries in blender (or food processor bowl); pulse until pureed (or desired texture).
    3. Divide strawberry mixture among 4 tall glasses (or champagne flutes). Top each with 3 scoops sherbet, then fill cups with sparkling water, creating foam. Garnish drinks with strawberry skewers and sprinkles, if using. Serve with straws.

    Chef's Tip: To make in a punch bowl, prepare recipe through Step 2, then whisk strawberry puree and sparkling water in punch bowl. Add scoops of sherbet and stir briefly until sherbet is slightly melted and drink is foamy and creamy.
