Cucumber Ribbon Salad

Ingredients

  • 3 green onions
  • ¼ cup refrigerated ginger salad dressing
  • 1 tablespoon granulated sugar
  • 2 tablespoons rice vinegar
  • 1 large cucumber

Steps

    1. Slice green onions thinly. Combine green onions, dressing, sugar, and vinegar in medium bowl.
    2. Peel cucumber; cut into 3- to 4-inch long sections. Use vegetable peeler to shave thin, lengthwise strips of cucumber into bowl with dressing (peel until reaching cores; discard cores).
    3. Toss to coat; chill until ready to serve.
