Cucumber, Mint, and Lime Ice Pops

Ingredients

  • ½ cup water
  • ½ cup sugar
  • 1 seedless cucumber
  • 8 limes, for zest/juice
  • ¼ teaspoon kosher salt
  • 3 tablespoons fresh mint

Steps

    1. Bring water and sugar to a simmer in small sauce pan on medium; simmer 5 minutes, stirring occasionally, or until sugar has dissolved. Chill simple syrup 30 minutes.
    2. Peel cucumber, then cut into chunks. Zest 1 lime (1 teaspoon); squeeze all limes for juice (½ cup). Place in blender: cucumbers, lime zest, juice, simple syrup, and salt; blend until smooth. Add mint (leaves only); pulse until mint is finely chopped (do not over blend).
    3. Pour mixture into 12 (5.3-oz) ice-pop molds, leaving ¼ inch space at the top. Insert ice-pop sticks; freeze 2 ½–3 hours or until completely firm. Serve.
