Ingredients
- ½ cup water
- ½ cup sugar
- 1 seedless cucumber
- 8 limes, for zest/juice
- ¼ teaspoon kosher salt
- 3 tablespoons fresh mint
Steps
- Bring water and sugar to a simmer in small sauce pan on medium; simmer 5 minutes, stirring occasionally, or until sugar has dissolved. Chill simple syrup 30 minutes.
- Peel cucumber, then cut into chunks. Zest 1 lime (1 teaspoon); squeeze all limes for juice (½ cup). Place in blender: cucumbers, lime zest, juice, simple syrup, and salt; blend until smooth. Add mint (leaves only); pulse until mint is finely chopped (do not over blend).
- Pour mixture into 12 (5.3-oz) ice-pop molds, leaving ¼ inch space at the top. Insert ice-pop sticks; freeze 2 ½–3 hours or until completely firm. Serve.
