Cuban-Style Red Cabbage Slaw

Ingredients

  • 1 large head red cabbage
  • 1 clove garlic
  • ½ bunch fresh cilantro
  • 1 fresh jalapeño pepper
  • 1 cup apple cider vinegar
  • 2 tablespoons orange juice
  • 3 tablespoons honey
  • 1 tablespoon dried oregano
  • 1 teaspoon kosher salt
  • ½ teaspoon pepper
  • 1 (10 oz) package matchstick carrots

Steps

    1. Shred cabbage; chop garlic, cilantro, and jalapeño (removing seeds and membrane, if desired) finely. Combine in large bowl: garlic, vinegar, juice, honey, oregano, salt, and pepper until blended.
    2. Add cabbage, cilantro, jalapeños, and carrots to bowl and toss to coat. Chill at least 3 hours; serve.
