Chicken Avocado Burgers
Ingredients
- 1 large zucchini squash
- 1 tablespoon fresh oregano
- 1 ½ lb ground chicken (or ground turkey)
- 1 cup crumbled feta cheese
- ½ cup sliced fresh green onions
- ½ teaspoon kosher salt
- ¼ teaspoon pepper
- ¾ cup plain breadcrumbs
- ¼ cup liquid egg whites
- 3 teaspoons canola oil, divided
- 1 small red onion
- 1 medium tomato
- 1 Hass avocado
- 8 Bakery Kaiser rolls
Steps
- Grate zucchini and pat dry with paper towels; chop oregano finely. Combine in large bowl: chicken, feta, oregano, green onions, zucchini, salt, pepper, breadcrumbs, and egg whites; mix until just combined. Shape mixture into 8 burger patties (wash hands); chill 30 minutes.
- Preheat large, nonstick sauté pan on medium 2–3 minutes. Place 1 ½ teaspoons oil in pan; add 4 patties and cook 5–6 minutes on each side until 165°F. Repeat with remaining 1 ½ teaspoons oil and 4 patties.
- Slice red onion and tomato thinly. Halve avocado, scoop out flesh, and slice thinly. Place burgers on buns; top with red onions, tomatoes, and avocados. Serve.
Cuban-Style Crunch Burgers
Ingredients
- ¼ cup dill pickle chips
- ¼ cup mayonnaise
- 1 tablespoon prepared mustard
- 1 tablespoon steak sauce
- ½ cup ketchup
- 2 tablespoons hot taco sauce
- 1 tablespoon + 1 teaspoon sazón (or complete) seasoning, divided
- 1 ½ lb ground beef [or 4 (6 oz) burger patties]
- 8 slices Swiss cheese (about 8 oz)
- 4 hamburger buns
- 1 cup crispy potato sticks
- Burger toppings such as lettuce, tomatoes, and onions (optional, for serving)
Steps
- Preheat grill (or grill pan) on medium-high. Drain pickles, reserving 2 tablespoons pickle juice; chop pickles coarsely.
- Combine in small bowl: pickles, mayonnaise, mustard, and steak sauce until blended. Combine in second small bowl: pickle juice, ketchup, taco sauce, and 1 tablespoon seasoning until blended.
- Divide beef into 4 even portions, then form into patties; sprinkle with remaining 1 teaspoon seasoning (wash hands). Place burgers on grill and cook 4 minutes without flipping. Flip burgers, then brush about 3 tablespoons ketchup mixture on top of each. Cook 3–4 more minutes until burgers are 160°F. Place cheese on burgers during last minute of cook time.
- Toast buns if desired. Spread mayonnaise mixture evenly inside buns. Place burger patties on bottom buns; top evenly with potato sticks and burger toppings, if using. Complete burgers with top buns; serve.
