Crunch Waffle Sandwiches

Ingredients

  • 1 cup mixed fresh berries (such as blueberries, raspberries, strawberries, and blackberries)
  • 3 tablespoons no-sugar-added almond butter
  • 2 tablespoons water
  • ¼ cup chocolate and oat protein granola
  • Large zip-top bag
  • 8 frozen whole grain protein waffles

Steps

    1. Place berries, almond butter, and water in microwave-safe bowl; cover and microwave on HIGH 1–1 ½ minutes until berries are soft and warm. Mash with whisk (or fork) and stir until blended; chill 1 hour.
    2. Meanwhile, place granola in bag, seal, and crush granola into small pieces.
    3. Toast waffles following package instructions. Spread berry mixture on 1 side of 4 waffles; top with granola and remaining 4 waffles to make sandwiches. Serve.
