Crispy Bean Salad with Vinaigrette and Cheese

Ingredients

  • 1 (8-oz) package French green beans
  • ½ cup balsamic vinaigrette
  • ½ cup grape tomatoes, halved
  • ¼ cup shaved Parmesan cheese

Steps

    1. Bring 1 quart of water to boil. Add green beans to water; boil 3–4 minutes or until crisp-tender. Drain beans and immediately place in bowl with 1 cup ice cubes and 1 cup water; let stand 3–4 minutes to shock (stop the cooking process).
    2. Drain beans thoroughly and pat dry, then toss with vinaigrette. Top with tomatoes and cheese.

    Sauté: Cook beans following package instructions. Preheat large sauté pan on medium-high 2–3 minutes. Place 1 tablespoon olive oil in pan, then add beans, salt, and pepper; cook and stir 2–3 minutes or until crisp-tender. Top with cooked bacon pieces.
