Ingredients

  • 1 cup yellow cornmeal
  • 4 cups reduced-sodium chicken broth
  • ½ teaspoon kosher salt
  • ¼ teaspoon pepper
  • ½ cup crumbled goat cheese

Steps

    1. Combine cornmeal, broth, salt, and pepper in microwave-safe bowl. Cover and microwave on HIGH 8–10 minutes, whisking every 3 minutes, until liquid has been absorbed and polenta has thickened.
    2. Stir in goat cheese and serve.
