Ingredients
- 8 oz fettuccine (or linguine) pasta
- 3 oz Publix Deli Parmesan cheese wedge
- 2 cloves garlic
- 16 oz heavy whipping cream
- ¼ teaspoon pepper
- ⅛ teaspoon ground nutmeg
Steps
- Cook pasta following package instructions. Remove cheese rind (reserve) and grate cheese (about 1 cup); chop garlic finely.
- Place cream, cheese rind, and garlic in large saucepan on medium; bring to a simmer and cook 7–8 minutes, stirring occasionally, until reduced by one-half.
- Remove pan from heat; remove rind. Whisk grated cheese, pepper, and nutmeg into cream mixture until blended. Stir in pasta and serve.
Other Preparation Methods
- Caesar salad: Place 1 clove garlic, 1 teaspoon Dijon mustard, 3 anchovy fillets, 2 tablespoons lemon juice, 1 cup mayonnaise, ½ cup grated Parmesan cheese, and ¼ teaspoon pepper in food processor bowl; process until smooth. Combine with chopped romaine.
- Topping: Combine equal amounts grated Parmesan cheese and panko bread crumbs. Sprinkle over your favorite casserole before baking for a crunchy, cheesy topping.
