Creamy Garlic and Herb Scalloped Potatoes

Ingredients

  • Cooking spray
  • 8 medium gold potatoes (about 3 lb)
  • 1 large shallot
  • 2 tablespoons unsalted butter
  • 1 ½ cups garlic stir-in paste
  • 3 cups heavy whipping cream
  • 1 package garlic-herb spreadable cheese (10–12 oz)
  • 1 tablespoon roasted garlic-herb seasoning
  • Aluminum foil
  • 2 teaspoons lightly dried parsley (optional)

Steps

    1. Preheat oven to 400°F. Coat 13- x 9-inch baking dish with spray. Peel potatoes if desired; cut into ¼-inch-thick slices and place in bowl of cold water. Chop shallot finely (¼ cup).
    2. Melt butter in medium saucepan on medium. Add shallots and garlic paste; cook and stir 2 minutes. Stir in heavy cream, spreadable cheese, and garlic-herb seasoning. Simmer 5 minutes, whisking continuously, until cheese is melted and sauce is smooth. Remove from heat.
    3. Drain potatoes thoroughly. Arrange potatoes in slightly overlapping rows in prepared baking dish, adding cheese sauce between layers, until all potatoes and sauce are used, ending with sauce on top.
    4. Cover dish with foil; bake 1 hour. Remove foil and bake 20–30 more minutes until potatoes are fork-tender and top has lightly browned. Top with parsley, if using. Let stand 15 minutes; sauce will thicken as it stands. Serve.
