Ingredients
- 1 (32-oz) container prediced calabaza squash
- 1 cup prediced onions
- 3 cups sweet apple slices
- 1 tablespoon chili powder
- 1 (32-oz) box chicken stock
- ¼ cup cilantro
- ¼ cup heavy cream
- ½ teaspoon kosher salt
- Dash of chipotle powder (optional)
Steps
- Add to large stockpot: calabaza, onions, apples, chili powder, and stock; bring to a boil. Reduce heat to low; cover and simmer 40–45 minutes or until calabaza is tender.
- Transfer calabaza soup to food processor bowl (or blender). Add cilantro, and heavy cream; process until smooth. Season with salt and chipotle powder (if desired). Serve.
