Cranberry-Orange Oatmeal Ice Cream Sandwiches

Ingredients

  • 1 (16-ct) package cranberry orange oatmeal cookies
  • 8 tablespoons raspberry preserves (or jam)
  • 1 cup yogurt covered pretzels
  • 2 cups vanilla ice cream
  • Parchment paper (optional)

Steps

    1. Place 8 cookies, face down, on a cutting board or baking sheet. Spread 1 tablespoon raspberry preserves on each cookie.
    2. Chop pretzels into small pieces; sprinkle on top of preserves.
    3. Place 1 scoop (¼ cup) of ice cream onto each cookie; top each with remaining cookie. Serve immediately or wrap individually with parchment paper and freeze until ready to serve.
