Ingredients
- 1 (16-ct) package cranberry orange oatmeal cookies
- 8 tablespoons raspberry preserves (or jam)
- 1 cup yogurt covered pretzels
- 2 cups vanilla ice cream
- Parchment paper (optional)
Steps
- Place 8 cookies, face down, on a cutting board or baking sheet. Spread 1 tablespoon raspberry preserves on each cookie.
- Chop pretzels into small pieces; sprinkle on top of preserves.
- Place 1 scoop (¼ cup) of ice cream onto each cookie; top each with remaining cookie. Serve immediately or wrap individually with parchment paper and freeze until ready to serve.
