Cowboy Steaks and Onion Shrimp
Ingredients
- ⅓ cup cooked bacon bits
- ⅓ cup tomato paste
- 1 tablespoon chipotle hot sauce
- ¼ teaspoon ground cumin
- 4 tablespoons canola oil, divided
- 32 peeled/deveined large shrimp (about 1 ½ lb)
- 8 (6-inch) wooden skewers
- ¼ cup citrus and onion chicken marinade
- 1 ½ lb boneless grilling steaks (such as ribeye, New York strip, or top sirloin)
- ½ teaspoon kosher salt
- ½ teaspoon freshly cracked black pepper
- ¼ cup crispy fried onions
Steps
- Preheat grill (or grill pan) on medium-high. Combine bacon, tomato paste, hot sauce, cumin, and 2 tablespoons oil. Thread 4 shrimp onto each skewer and arrange in baking dish (wash hands).
- Combine chicken marinade and remaining 2 tablespoons oil until well blended; brush one-half marinade mixture over both sides of shrimp.
- Season steaks with salt and pepper (wash hands). Place on grill and cook 2–4 minutes on each side until 125°F (for medium rare; warm red center), 130°F (for medium; warm pink center), or up to 170°F (for well done). Top steaks with tomato mixture; cover and cook 1–2 more minutes. Remove steaks from grill and let stand 5–10 minutes before serving; temperature will rise 5–10°F during that time.
- Place shrimp on grill; cook 1–2 minutes on each side until shrimp are pink and opaque; brush with remaining half marinade mixture during last minute of cook time. Crush onions; sprinkle over shrimp. Serve.
Barbecue Potato Bake
Ingredients
- 1 (24 oz) package refrigerated mashed potatoes
- ½ cup barbecue sauce
- ¼ teaspoon pepper
- ½ cup shredded cheddar cheese
- ¼ cup crispy fried onions
- Aluminum foil
Steps
- Preheat oven to 400°F. Combine potatoes, barbecue sauce, and pepper; transfer to 2-quart baking dish. Top with cheese and onions; cover loosely with foil. Bake 10 minutes.
- Remove foil from potatoes; bake 5–10 more minutes until onions are crisp. Serve.
