Cowboy Steaks and Onion Shrimp

Ingredients

  • ⅓ cup cooked bacon bits
  • ⅓ cup tomato paste
  • 1 tablespoon chipotle hot sauce
  • ¼ teaspoon ground cumin
  • 4 tablespoons canola oil, divided
  • 32 peeled/deveined large shrimp (about 1 ½ lb)
  • 8 (6-inch) wooden skewers
  • ¼ cup citrus and onion chicken marinade
  • 1 ½ lb boneless grilling steaks (such as ribeye, New York strip, or top sirloin)
  • ½ teaspoon kosher salt
  • ½ teaspoon freshly cracked black pepper
  • ¼ cup crispy fried onions

Steps

    1. Preheat grill (or grill pan) on medium-high. Combine bacon, tomato paste, hot sauce, cumin, and 2 tablespoons oil. Thread 4 shrimp onto each skewer and arrange in baking dish (wash hands).
    2. Combine chicken marinade and remaining 2 tablespoons oil until well blended; brush one-half marinade mixture over both sides of shrimp.
    3. Season steaks with salt and pepper (wash hands). Place on grill and cook 2–4 minutes on each side until 125°F (for medium rare; warm red center), 130°F (for medium; warm pink center), or up to 170°F (for well done). Top steaks with tomato mixture; cover and cook 1–2 more minutes. Remove steaks from grill and let stand 5–10 minutes before serving; temperature will rise 5–10°F during that time.
    4. Place shrimp on grill; cook 1–2 minutes on each side until shrimp are pink and opaque; brush with remaining half marinade mixture during last minute of cook time. Crush onions; sprinkle over shrimp. Serve.

The doneness temperatures for medium rare and medium stated above are traditional temperatures used for cooking steak, but are not recommended by the USDA. To maintain food safety, the USDA recommends an internal temperature of 145°F, as measured using a food thermometer, with a 3-minute rest time before carving.
