Ingredients
- 1 cup pearl couscous (or orzo pasta)
- ½ seedless cucumber, finely chopped
- 2 stalks celery, finely chopped
- ¼ cup Italian parsley, finely chopped
- 1 (8-oz) container prediced tri-pepper mix
- 1 (8-oz) container prediced tomato
- 1 cup matchstick carrots
- ⅓ cup lemon vinaigrette
- 1 (8-oz) container crumbled feta cheese
Steps
- Prepare couscous following package instructions. Drain and cool 5-10 minutes. Peel and chop cucumber (1 cup); chop celery (½ cup) and parsley (¼ cup).
- Combine remaining ingredients with couscous, toss until coated. Serve.
